Each block was hand-harvested into small boxes at daybreak and carefully sorted at the winery. Our winemaker allowed four days of cold soak, for a gentle extraction of color and flavor, followed by a warm fermentation. Several weeks of extended maceration increased flavor intensity and rounded the tannins. Malolactic fermentation and aging in French oak further enhanced the length, depth and complexity, culminating in a well-integrated, cellar-worthy wine with a velvety texture.
