Located in the Oak Knoll District of Napa Valley, the well-drained sandy and gravelly soils of our estate vineyard, in partnership with moderate temperatures, yield the great flavor intensity, yet supple mouth-feel of our Estate Cab. The tremendous depth and complexity of our Estate Cabernet is further enhanced by the four carefully selected Cabernet clones planted here.
Each block was hand-harvested into small boxes at daybreak and carefully sorted at the winery. Our winemaker allowed four days of cold soak, for a gentle extraction of color and flavor, followed by a warm fermentation. Several weeks of extended maceration increased flavor intensity and rounded the tannins. Malolactic fermentation and aging in French oak further enhanced the length, depth and complexity, culminating in a well-integrated, cellar-worthy wine with a velvety texture.
The deep aromas and flavors reveal layer upon layer saturated with black cherry liqueur, wild berries, violet, warm toasty oak, cocoa and spice character. The lush, concentrated flavors echo the aromas, framed by plush tannins and a long, dark chocolate-cherry laced finish.
Join Bob and Joni Williamson, proprietors of Ideology Cellars and winemaker Gustavo Gonzalez for fun and educational wine seminars, a winemaker dinner, and some of the most scenic and spectacular ports of call. This will be an unforgettable journey.
