Our grapes were hand-picked by the Red Hen Vineyard team cold at night and delivered to our winery before dawn. We gently whole cluster pressed the grapes at dawn to capture and preserve luscious fruit and bright acidity. The juice was then allowed to start with beautiful mix of native and classic fermentation in stainless steel until the fermentation gained strength, then completed the majority of fermentation in Burgundy's finest French oak barrels. Our Reserve Chardonnay then aged sur-lie with bâtonnage and underwent secondary malolactic fermentation to further increase smooth body and fullness of palate.
Our Reserve Chardonnay is aged exclusively in a rich toast and oak stave grain selection of Tonnellerie François Frères Burgundian barrels. The wine went through a diligent program of bâtonnage (stirring of the lees after fermentation) to complement the rich, lively fruit from the Red Hen Vineyard.
Tasting – Warm apple pie aromatics lead to a lush, creamy palate of Gala and Granny Smith apple with nuances of butterscotch, pear and juicy citrus fruit. This is a rich, full-bodied Chardonnay that will age nicely for those patient enough to wait.
